The Chinese Guardian Lion that guards Silk Garden’s main entrance.

Multi-award winner, Chef Roy Wong from Palace of The Golden Horses introduced new techniques and ingredients which enhanced the taste, aroma, texture and colour of the dishes. The fundamental techniques were maintained in which there was a balance between hot and cold, pickled and fresh, as well as spicy and mild.

Under the expert hands of Chef Roy, the culinary exploration are as follows:

An appetising Deep Fried Abalone in Fish Puree and White Radish.

An energising Chicken Broth with Fish Maw and Black Chicken Gyoza.

First main course : Duck Breast served with Homemade Bean Curd Tart Au Jus.

Second main course : Beef Brisket with sauteed egg white in Teow Chew sauce.

Third main course : Thin Egg Noodles with Australian Scallops in Cauliflower sauce.

A delightful dessert of Sweet Soup with Edamame Beans and Snow Jelly.

Each course was paired with selected wines from Winecellars. This collaboration helped bring the rich, robust and tempting flavours to the palate of food and wine lovers alike.

As our first foray in introducing and launching the start of the food festival, we converted Tarik’s into a platform for the festival’s opening night. It was an exciting never-before-seen event, a collaboration of food, wine and music. Each of the guest chef’s stations were decorative, eye-catching and lit with lights of different colors.

The evening commenced with a cocktail style welcome party of canapés and delicious food showcased by our guest chefs at their respective stations, and fine wines from Winecellars by the glass.

Three spectacular chefs have been invited from outside of Sabah for this year’s culinary extravaganza. This year, May 1 was a very important day for us at the Tanjung Aru Railway Station. His Excellency Tun Datuk Seri Panglima Haji Juhar Haji Mahiruddin (Governor of Sabah), the Honorable Datuk Seri Panglima Toh Puan Datuk RM Jasni Norlidah and family arrived in the morning to board our North Borneo Railway‘s Vulcan V6 Steam Train. They were accompanied by senior officials from various Ministries/Departments as well as representatives from the Sabah State Railway.
